Great on its own, I realized that the refreshing light flavor of coconut water might make for a great cocktail and boy did it! An obvious choice as pairing with coconut water is rum. I mean, both sugar cane and coconuts grow in tropical areas, so the mixing of them together with a splash of lime can’t be bad. It wasn’t bad. It was divine. Refreshing, light, cool, and crisp, it is the perfect throw-down response to these sweltering days when all you feel you are doing is unsticking your self from plastic seats and sitting with your face full on in front of the fan like a dog hanging its head out the car window.
Ingredients
2 ounces high quality rum. The Cane & Abe rum from the Old Sugar Distillery in town is great, but it will make the color of the drink more golden. If you want to keep the light white color of the coconut water go with a nice white rum.
4 ounces coconut water. I like Taste Nirvana.
Squeeze of lime (approx 1/4 lime)
Teaspoon of sugar if you like your drink a bit sweeter
Preparation
Pour all ingredients into a shaker and shake for 30 seconds. Pour into a highball glass over crushed ice, or into a martini glass without ice. Garnish with a slice of lime. Enjoy and then have another!
